PF cakes look beautiful.. but only ONE fruit?

Hi, I've been lurking for quite a time now, however I'm stumped and have used the search function to narrow down what I'm NOT doing wrong, haha.
Inoculated 8 1/2 pint jars (brf, dry verm on top, didn't close holes). 5 fully colonized, 3 still sitting away partially colonized. I let the 5 consolidate for 10 days. Birth, rinse, 24h cold water dunk (not in fridge), rinse, partial dry verm roll (first timer, I was being really careful and didn't cover every inch of the cakes) placed in SFC. FC had holes along a 2" grid on all 5 sides (holes added to the top 3 days later after reading more), it's a clear tote, I have a 6500k light blue bulb sitting about an inch away, facing it. FC is on a 3 foot shelf, with wood blocks under the corners for elevation, has natural non direct light coming through the window (I turn the lamp on when I wake up and turn it off at sunset, so the beginning and end of the day it gets natural sunlight only). Temp ranges from 70F at night to about 78F at its highest sometimes during the day. Mist fan 4x daily, the longest it goes without me providing FAE via lid removal and fan is about 8 hours (work), but with the sfc this shouldn't be a prob. Perlite 4" from bottom, baked cooled and soaked/drained, humidity reads a fairly constant 92-97%.
Now for the weird part; of the 5 cakes, there were 2 pins on one cake within 3 days. Exciting! However, after 7 days, these are still the only fruits. One has gotten big, about an inch long and really fat. The other has not changed in size, and no other cake has pinned at all, they were just slowly turning blue. After 9 days total in the SFC, after reading more on this website, I took a chance and redunked the 4 without any fruit, I assumed that maybe the lack of a heavy amount of dry verm could have let my cakes dry too quick. That is where we stand now; I just placed the 12h dunked and verm rolled cakes back in the sfc this morning. The one cake that has a fruit is significantly smaller, and only the one fruit is still growing.
What went wrong with my first run? Was the redunk a smart move? Anything else I'm notably doing wrong or a crucial setup I missed and haven't mentioned?

Everything sounds good, but i would have waited longer on those 4 cakes.
Sometimes my cakes take up to 2 1/2 weeks to pin, but after i get pins they fully grow within 5-6 days usually.
So i would say just give em some more time. Good luck

Some times you just wont get as many fruits as you want. But other times you will get more than you know what to do with. Keep trying.

I know what you mean, one day you're all like, wow thats a lot of pins, looks great... the next day you're frantically searching stores for meat dehyrators and extra racks because you dont want a bunch of purple fruits...
I thought they would all fit * 1 new dehyradrator and four extra trays later * there we goo...

Wow!
To the Original poster; I feel ya' my brotha.
I am in your exact case! This is the sole' reason I am here today! ...this brought a Tear to my eye. We are problematic brothers.
At any rate; this is mine. The luck is on your side! I have 44 cakes; four pins.
One fruit that makes me want to research harvest proceeders.
You are over-looking something;
patience. I have yet to see the light -- but from what I hear it is glorious.
Majority of them are bluein' up.

...a moment in silence for the ProblematicBros.

As for my update; it looks like even though my humidity was golden, the cakes were simply losing water too quickly. After I dunk/rerolled the others, I made sure to roll them until I couldn't see any white. Even when misting/fanning, some verm came off initially, but the bulk of it stayed on. The cakes have all started to fruit from the very bottom, I assume since that's where all the verm rolled to, that's why it stayed better hydrated down there, don't know if this is normal or not. Either way, the key is just finding a way to keep those suckers damp. Any other advice to add to keep them hydrated the best? I like the pf tek/sfc, but is there a way to make it better? Would casing resolve this issue further? Do I still use a sfc for a cased cake? Thanks guys!

I know that rerolling the cakes in verm is not needed and can slow things down. If you dunked them for 24 hours and rolled them in a fresh verm layer the first time, every other time you just have to dunk.

Well with the first dunk roll, I didn't really verm much, so I figured it couldn't hurt. But where the verm was thickest was where the fruiting starts, so I'd assume that's not coincidence and it really does hold that moisture in

It pinned on bottom because thats where the most moisture is, gravity can not be beat
