Vacuum Packing

We bought a FoodSaver vacuum packer system from Costco years ago. It came with a regular neck mason jar sealer. I bought a wide mouth attachment (for solid foods). There has been a lot of questions asked about how to store your dried product. This is the way I do it.
The system uses a plastic cap with a soft silicone ring inside of it and fits over a typical mason jar with a clear tube on each end. I will leave out the regular mouth demonstration as we are preserving dry goods.
To start, we will select our jar and hook up the tube to the vacuum cap.

Next we will select our settings


Now we plug in the tube to the main unit.


After filling the jar with the product (Shiitakes for this demo), we put the blank wide mouth lid on the full jar.

Now we place the cap over the jar and press the "canister" button until you get a vacuum.

Next we tighten down the band before storing it either on a shelf in a closet or the freezer.

Since we have more of the same product, we'll get out a half gallon wide mouth mason jar.

That's it! Tighten down the band and you have a vacuum packed, totally air free system to store your dry goods. I put mine in the freezer.

I hope that you found this presentation useful. If you do have a FoodSaver, you may be able to do the same thing.

I actually just bought a food saver off amazon yesterday, without the jar attachment....
Wondering how much a bag would crush dried fruits......only one way to find out i guess.

I went with the cheaper one with just the SEAL and VAC & SEAL options.
The automatic seal sensor on the bigger ones, plus all the negative reviews kinda steered me away.
It was either spend $160+ on a unit that had a bunch of extra features and a lot of bad reviews or get the $69.99 one that had great reviews and just 2 functions.
The jew in me chose the latter......lol.

The secret to the one with the bad reviews is to wet down the top and bottom black foam strips and it will work like new every time. I found that out on my own.
If you don't wet them down, it WON'T work.

When it gets as tight as you want it, hit the vac/seal button and it will cancel the suction, then quickly hit the seal button. This should work on most brands of sealer

I always use mine with the bags instead of the jars. The bags don't crush the dried fruits. They work well as well.

The bags don't last as well. I used bags for a long time, but you always end up hitting the frozen bag against something and it punctures a super small hole in the bag and your screwed. If you are super careful about not bumping them, then they work fine. If you are crushing the fruits as you vacuum, then they have too much moisture in them. They have to be absolutely "cracker dry" to even think about preserving them.
That's just been my personal observation anyway. My wife is a bull in a china shop in the freezer tossing those bags around.

I used vac-bags for a bit. I found them cumbersome. Some fruits got broken, not a lot, but some. Some of the bags didn't hold a seal.
I bought a jar sealer and love it. I throw a desiccant pack in just to be safe. If it turns pink, it's easy to open the jar, replace the pack, then reseal.

Vacuum packing is not recommended for long term storage unless you're able to follow a HACCP plan when packing it. Anaerobic bacteria can survive in vacuum packages (like Botulinum toxin) and multiply while inside. For this reason, to become a company that vacuum packs / cans food you have to be held to an incredibly high standard and receive regular inspections. If you do vacuum pack, it's safer to freeze if it's going to be for long term storage.

I've been using a quart jar with a multi-layered cheesecloth pouch of Drierite in the bottom. No vacuum sealing or freezing necessary if you're storing fruits which are fully dessicated. Works well so far in two incredibly humid environments: PacNW, and Atlanta.
