If you give them more time aren't they just bulking up on water weight? Three disads: 1. Sucking it out of the cake 2. Must be dried out for storage 3. opened caps break more readily
I mean, dunking might remedy the former problem, and unless you're using Damp-Rid, the latter's no big deal, so if you like flat caps and don't mind shake, why not?

I prefer how they are in the pictures. No spore mess, gets me started on the 2nd/3rd flush sooner, and fits in the dehydrator easier. I think it is just up to your preference though.

This is correct. When any substrate produces a flush all the way to spore drop, the mycelium naturally enters die-back mode, since the life cycle is complete. Green mold soon follows.
By picking just before the veil tears, you capture the best food quality and also prevent the spores dropping. RR

I always wait until basically all of the veils have broken, but before they drop spores. Then take a spore print of one or two of them and take the rest out to the backyard or garden and tap the spores out of them. Hopefully next year you could find them growing in your own backyard at least give the spores a fighting chance of growing somewhere. Just my 2 cents
