In vitro growth and still not fully colonized?

It's been over two months and I'm still waiting for this half pint jar to colonize with my cake.  It's still chugging along, not contaminated but only about 2/3 colonized.  Now some mushrooms are starting to grow inside.

Should I just bust out the cake, dunk it and roll it, and hope that it's protected?  It is going soooo slow.  I had it in a double tub incubator but the aquarium heater broke after the first two weeks.  Now it's just in a styrofoam cooler wrapped in a blanket.  I don't know why things are taking so long to colonize but it's driving me crazy.

Is the jar wide mouth or regular?
If regular, I assume it's the bottom third that's uncolonized, in which case you can try flipping the jars

Jars need GE. put it out in the open and heat the room not the jars.
