You could try mixing it with straw outdoors using the cold pasteurization technique pioneered my Stamets.
Ive read about it in his book mycelium running but never tried it myself. If you try it let us know im planning to try it for my stem butt oyster grow.

It's rarely getting above freezing here so my water outside is turned off.... I guess I could do it in the sink but I also don't have straw.... I'm pretty sure the sell small bales at the arts and crafts stores around here.

check this out 
I had a chunk of king oyster growing on shredded, sterile cardboard in a jar for shits and giggles. It was growing like crazy but real wispy. Then I packed down the cardboard and loaded a bunch of hardwood sawdust I hydrated with coffee and gypsum and pasteurized. These are pics of it taking off on the sawdust! Maybe you could do something like this?

I would try adding exponentially increasing amounts of coffee waste (to prevent contams). I tried doing this and inoculating a big bag of paper waste and the mycelium just died off the spawn cardboard after a few days. I probably did a lot of stuff wrong but I suspect part of it had to do with the complete lack of nutrients.

Yes but you have to be careful in adding something so nutrient rich like a large amount of coffee grounds.. Mold also likes the nutrients of coffee and this will make it much more likely to contaminate. You need to be more sterile if you are to use this method and properly pasteurize your coffee. Even this if your going from cardboard you still risk it contaminating.
My coffee bags contaminated so i hung them outside from a tree. The lower temps is helping the oyster mycelium out compete the rest but theres still multiple contams in each bag.

Well I'm about to spawn this to some saw dust once I can get the pellets. I also plan on busting out the "spore bank" and try and get some of these going with my garden this year.
It really isn't that big of a spore bank but eh. So far it consists of: -Oyster - Beech -Vendor-LC - Lions Mane -Vendor-LC - Wine Cap -Vendor-LC
I've had success growing all the mycelium on popcorn but lost interest in it last year after hitting a financial situation. So this year in full swing of things I'm going to get all those SOB's to fruit. 
Questions are. what Grain/(?) should I start the myc out on this time? How can I keep this oyster going will aspen shavings work?

I did a agar style transfer of live mycelium off of the lid of my glad ware container. I used a syringe needle as a scalpel, after I flamed it of course.
I can see It recovering on the wbs, I plan on making GLC with it then fanning it out on a massive scale for my garden beds.
