No fanning required with Press n Seal methods?

So it's super f'in cold here. Space heaters. They dry everything out like crazy. I can't get the RH right in my greenhouse and keep the temp up SO I've been reading up on some other quick/cheap solutions to my problem (without starting a whole new set up) and VOILA came across info on the press n seal/saran wrap gig. Here's the question though:
Is it really true that I don't need to mist or fan these substrates after putting on the press n seal?
Everything I've read about press n seal seems to contradict everything I've been doing with the GH lol. How is my sub going to know when to pin if I don't have FAE or a humidity drop? Do I really just slap the press n seal over these puppies, cut a few slits, and let it ride until mushrooms start pushing up on it? That seems too simple...

Just an update for anyone curious who may be perusing this question...it would appear it is as simple as I thought. The trays are maintaining humidity just fine, no signs of too little FAE in the fruits, so *shrug* try it out fo' yo'selfs!
