New to gourmet, need advice on what species to grow

I live in Hawaii and want to grow gourmet mushrooms.  The temps here are 60 as a low in the winter, and usually not more than 75, sometimes 80 or more in the summer but not too often.  I want something I can grow outdoors and has good market potential.  Currently the stores carry a few kinds, button, shittake, portobello, crimini and sometimes the king oyster.  I'd like to do something not already being done.  Any advice for me?

First I would check your local farmers markets and see what is there.

That will give you an idea of what the market likes.

It would be a good idea to grow something that can grow on a waste product of another
industry as you are rather isolated and some products will not be available to you.

Can someone tell me what species Sparkle specializes in? That might be a good
choice.

Oysters are always easy and people seem to like them.

The farmers markets don't sell mushrooms here, only grocery stores.  I can get wheat straw, sawdust and I can get fish heads for cheap.

I thought about oysters but the fruiting temps and initiation temps are low according to Stamets.  Initiation temp 50-60, I cannot do this here.  I don't have the ability to grow indoors and bring the temperature down.

Calocybe indica

Might need a bit higher temp than what the OP is specifying though.

Pink and golden oysters both like it warm. So does the straw mushroom (Volvariella volvacea).
