Minimal dietary requirements

So I want to get to as low body fat percentage as possible and increase my cardio exercise by at least 100% but I'm not sure what I should eat. I want to eat the same thing every day at least the same meal for dinner every day and same breakfast everyday. I have eaten a minimal diet before with very good results and I think it would be the best route. The only problem is before  I was eating potatoes and eggs with leafy green vegetables for every meal but I am vegan now so I can't eat the eggs for protein which was my main source of protein for gaining mass.
        I just need some suggestions on foods I could eat raw or with very little prep work (like baking or boiling a potatoes) that will supply me with the proper nutrients day after day. I especially need a good source of protein because I plan on not using soy isolate anymore. I was thinking sweet potatoe or carrots and some sort of protein for lunch and dinner and for breakfast a potatoe and maybe some oats and bananna. I was also thinking of almonds but only as a snack in small quantities. If anyone has any ideas I would sure appreciate it. If it helps I am around 6'3" and I weigh 280 right now. Im not really fat but I have more body fat than I want. I gain muscle relatively easy but losing fat always takes intense effort. Thanks.
