Substitute yams for potatoes in pda?
    #19245306 - 12/08/13 02:29 PM (10 years, 1 month ago)

Think this would be ok? They're pretty similar in nutritional content, if anything yams have a bit more vitamins and minerals afaik, think it'll be ok to sub them 1 for 1 in making agar?

Let us know.  The logic sounds good to me.  Potatoes are power food, no matter the color.

Yams/sweet potatoes are actually not potatoes, totally different family, but still as far as nutrition goes they're pretty similar. I'll probably give it a shot in the morning. Might make a cool orange hued agar too.

Wow.  I just learned something new.  I have eaten potatoes in many different colors including purple, and had no idea that something called a "Sweet potato" was not a potato at all....

Part of this came up thanksgiving though, and we discussed the differences of yams and sweet potatoes, which are different from each other as well.

But I never knew that a sweet potato was not a potato.  Its like a Hamburger I guess.....how much ground ham do you use in a hamburger?

Yams and sweet potatoes have more sugars.

I'm guessing it would result in faster growth that might not be as sustainable.

(Don't quote me on this last part
paul staments talks about it somewhere in 'The Mushroom Cultivator', I think in the agar section he compares the sustainable recipes with a range of supplements to health food, where simple sugars are less sustainable.  But yams sound good, are healthy and much more 'complete' than refined sugar.)

When you are eating a "Pumpkin Pie", you are actually eating a Blue Hubbard Squash pie, if it came out of a can. Pumpkins are for decoration only.

There is a difference on how the potato powder settle down at the bottom of the jar versus the sweet/yam potato agar powder.  The sweet potato can spoil easily and not last as long after PC because they hold more water content.  Your real agar powder has to be 3 times more mixed in with the sweet potato to take in the extra water.  But the potato powder tends to compact more and not hold much water once they settle down.  I use 3:1:1 ratio for the extra nutrition.  Almost 2 months now as I have seen the agar drying out but all covered with myc.  I can expand my culture if I want to but this is an experiment only to see what will happen next.  I'm hoping that the agar will be covered in molds by now but so far they are still clean after the myc. covered all over.  Since the myc. is very thick and the agar almost all dried out I think the next step is to put it inside a plastic bag and suck all the air out to put in the frig. for long term storage.

Well I'm pressure cooking it now. I did 100g sweet potatoes, 10g agar, 5g sugar in the raw, and 1-2g of bakers yeast.

Sure, I'll take some in the morning. The water had a nice golden color to it with just the potatoes and then clouded up after adding the agar and sugar. Iirc when making them with normal potatoes the water would be a cloudy white, might be more visually appealing/easier to see through, however the agar made the water a lot more cloudy then I remember, I'm concerned I used too much. Should work either way, but I hope it's not a block. I followed the recipe, but I don't trust my scale all that much so the weight may have been over by up to a few grams.
