Hanukkah:
Despite not even being one of the Jewish high holidays, Hanukkah is without about the most well known Jewish holiday. The sad part is that great majority of the reason things are this way, is because of how close Hanukkah is to Christmas. But all this is besides the point.

Roughly around 200 B.C.E. Antiochus III the king of Syria gained control over Judea aka Israel. He was a good guy and allowed the Jews living there to continue practicing their religion. Problems would not arise until his son Antiochus IV Epiphanes gained control. He outlawed Judaism and forced the Jews to worship the Greek Gods. In 168 B.C.E. things reached their climax then he sent his soldiers upon Jerusalem massacring thousands. Adding insult to injury they desecrated the Jews holy Second Temple by erecting an alter to Zeus and sacrificing pigs.
Enraged, Jewish priest Mattathias and his sons lead a rebellion against the Syrian rule. In 166 B.C.E. Mattathias died and his son Judah Maccabee took over, using guerilla tactics within two years the Syrians and withdrawn. Due to his success Judah was dubbed "the Hammer" which might remind some of you of the hilarious movie "the hebrew hammer" I'm pretty sure is still on netflix. Judah asked his followers to cleanse the Second Temple, rebuilding the alter and lighting the menorah.
The miracle of Hanukkah took place soon after this, when they began to face a dwindling oil supply for the menorah. They needed to keep the menorah burning every night but they reached a time when they only had enough oil for one single more day. But miraculously this was enough to keep it burning eight more nights as they found more oil. The Jewish sages decided to create an 8 day festival honoring this amazing event.

The event is celebrated with a nine armed menorah known as the hanukiah in hebrew. At sunset of each night a new candle is added to the menorah, the middle candle is used to light the other eight. Four sided tops called dreidels , potato pancakes called latkes, jam filled donuts called sufganiyot, and exchanging of gifts are also synonymous with Hanukkah. Speaking of Hanukkah, I'm gonna go celebrate Hanukkah with my girlfriend and her Jew parents.

It's from a language with a different alphabet, so there is no standard way to spell it in our alphabet. I think the "Ch" spelling is supposed to indicate that it should be a throatier sound than the way we normally pronounce "H" in English.
