I have to travel, can it just incubate for 8 weeks?

I have one monotub which is about ready to fruit, problem is that in exactly 6 days from now i have to travel somewhere for 8 weeks and there is nobody who can look after it and harvest it. How long can mycelium survive at Room temp?? room is about 26C at the moment... I could possibly separate it into two chunks and store it in the fridge if that would be better for its survival.

Stick it in the fridge. You should be alright. I'm not sure about "splitting" it? I have had jars in the fridge that did fine. Because cubes are a tropical species, freezing would be bad. My $0.02.

i know species like reishi and azures/ps cyans and whatnot can be frozen no prob but cubes i'm not so sure about

freezing will potentially harm it, yes. in the fridge at 40f is fine.
