Can H fasiciculare vary greatly in appearance? I've found them before and these seem much bigger and slightly less yellow/vibrant looking.

Good point, thinking about BRF grown oysters compared to huge wild oysters...
So are the Armillaria edible, or just in that genus? Never got to eat the last ones I found and i'd like to try them.

They are edible, but cook them well and try a small portion first. I find the stems very fibrous, and only eat the caps myself.
