Almost fully colonized, need some advice on the next steps...

Hey guys I am 5 weeks into my first grow ( 6 pf tek jars / Cambodian p. Cubensis ) after doing some research and learning the basics I have been anxiously awaiting full colonization as 5 weeks seems rather long for this. I recently knocked up 12 more jars w/Ecuadorian, and F+. These jars are colonizing much much faster then the Cambodians. Regardless the Cambodians are almost fully colonized a little less then a week and they should be 100% and I was wondering if I still need to allow for consolidation time(i.e. one week) It will be almost 7 weeks total without this consolidation time, and I was hoping I could simply birth the jars, then dunk and roll. Is this ok? Do you think it has been long enough for consolidation even though the bottom of the jars are just now becoming covered with mycellium? Any suggestions for the birthing process, should i dunk and roll, and whats the best method. Also I have been trying to determine the optimal fruiting temp. for my FC, I have been incubating at 75-82F, what temp is optimal for the fruiting stage? Lighting suggestion and any other advice would be great! Thanks guys… Have at it!

1.  I'd just birth the old jars.  Most of the substrate has been colonized for a very long time.

2.  Yes, dunk and roll.

3.  I recommend weighting your cakes down in a pot like in the RR videos, and then putting the cakes in a bowl of vermiculite and just sprinkling it all over. 

4.  The temperature you're incubating at sounds just great.

5.  Light on a 12/12 cycle with a 6500K fluorescent bulb.

Thanks for the advice! It is greatly appreciated, and I will be birthing the cakes as you recommended ASAP. Just to be clear, even though there is still 10% of the substrate visible on the bottom of a few jars, I should still birth them, as the center of the jars are most likely consolidated already? To reiterate, they have been white on all sides of the jars for almost two weeks. all together its been 6 weeks since inoculation date. I was wondering if I need to sterilize the vermiculite prior to dunk and roll or if the cakes are fairly resist ent to contams in the verm? Finally, should i put them in the fridge or just a cool spot in my house? I dont want to stall or hinder any fruit body growths due to drastic temp shock. Thanks again for your help it is really a huge help, I am super stoked to get the first flush of mushies...

I'd wait until the substrate is 100% colonized, or until it stalls completely.  You don't need to sterilize the vermiculite.  I'd put them into a fruiting chamber rather than a fridge or cool spot.
