I want to make a whole bunch of chili for my brother for christmas and can it in mason jars. How do I properly can it so it will seal and last for a long time on a shelf? Do I just pressur cook with a loose lid and then cool with a tight lid? Any help please would be helpful.

Yes, you would need to pressure cook it. Make sure you remove the air bubbles and wipe the rim clean. It only needs to be fingertip tight. As it cools a vacuum seal is formed.

You could always just dry the chilli in an oven or food dehydrater and add them to your con carne recipe, they last for ages when dried out and stored in a ziploc or jar

Whats con carne? Im making a vegetarian chili as I am a vegetarian and simply cannot cook with meat else Ill throw up everywhere from the smell, texture, and look of the meat. Ive read that chili is hard to can on account of meat, and beans. For some reason meat doesnt pressure cook well?? And beans explode in a pc?? I need not worry about any meat problems as its not in my recipe, but beans are...

Chilli con carne is a chilli, minced meat and kidney bean dish served with rice,I think it's Mexican but you could easily drop the minced meat from it.
I usually buy chilli in a jar called Sambal Oelek,it's chillis mixed with other ingredients and it's addictive.
Here's a recipe link:

I haven't made it myself because its only $2 for a 500g jar all year round where I live.
