if they are starting to pin before full colonization then you must have introduced fae or they are contaminated... pics would help.

no i have around 6 jars total, 3 are fully colonized and starting to pin and the other 3 have about 20% more to colonize.

my question was. Would it be fine if to cut off the un-colonized section on the 3 cakes that are around 80% and spawn them to coir with the other cakes that are FULLY colonized. or would it lead to an early contam in the bulk substrate.

I would just let them finish up. You'll likely be alright removing the uncolonized parts but I would never try it.

Don't be in a hurry or you waste all the time you already put in.  Wait until they're 100% colonized before spawning to bulk.
