Waiting 24 hours to sterilize WBS / Time
    #19209361 - 11/30/13 05:25 PM (10 years, 2 months ago)

Ahhh nothing but ups and downs here are my two questions to help me sleep at night.
I am using doc34s was tek:

First off after my 15psi weight started to wobble we only were able to run them on low for 45 minutes not 60 because we needed time to depressurize before making it to holiday diner, will this put me at major risk for con tams, we soaked and rinsed and did ever step perfect, the other thing is we did not have time to do the other 7 quart jars we have all ready to be put in the PC. We are storing these in a cool room and they are covered in tinfoil and we will sterilize tomorrow will this 24 gap from jarring til it actually makes it to the PC be an issue?

I also Knocked up a two pound rye bag and 6 brf bags just for a fun holiday season.

Fun day

I am hoping the WBS colonizes fast then spawning to franks simple coir in 14 quart containers. Do you think 1 quart of spawn is good for a 14 qt  mini mono?

I use an 18 quart mini mono for experiments and ms grows. I usually like to go 1.5 - 2 quarts spawn at a 1:2 ratio. You could probably get away with 1 quart, but more would be better IMO. However I use rye which has less nock points so maybe with WBS you might see faster colonization  Giver a try, should work okay might just take a little longer for the spawn run.

If you have more jars to do anyway, why don't you just sterilize them all at once? Better safe than sorry!

I've had success with as little PC time as 30 mins, it sort of just depends on whether or not there are endospores hiding in a dry spot of your grains, if you prepared them properly and they were fully saturated then the endospores probably already germinated.

You have to heat shock endospores if you're trying to germinate them. A simple cold soak will only cause a relatively small amount to germinate at a time. 60 minutes is cutting it slim already, I would not rely on 45 minutes. That's not even long enough for center grains to reach sterilization temperatures.

Don't you heat the grains prior to pressure cooking them?

Yes, and then you usually let them sit and strain for 30 minutes to an hour.....you really think that they are still warm?

Grains get PCed for no less than 90 minutes at 15psi.....we are not just saying this to waste our time.

  I usually let them go for 100-110 minutes......it's not a waste....it's proper sterilization.

You might not mind the occasional contam.....I do.

It is sterilized when the center reaches 250 for 15 mins, after that it is a waste.

Quote:

A widely used method for heat sterilization is the autoclave, sometimes called a converter. Autoclaves commonly use steam heated to 121–134 Β°C (250–273 Β°F). To achieve sterility, a holding time of at least 15 minutes at 121 Β°C (250 Β°F) at 100 kPa (15 psi), or 3 minutes at 134 Β°C (273 Β°F) at 100 kPa (15 psi) is required.

And how long does it take for the center of everyone's jars(not just yours) to reach that temp?

I mean unless you actually have a thermometer in one of the jars inside the PC(and then be able to see it somehow), there is no way you can sit here and tell me that 45 minutes is sufficient to get the center to proper temp.

You are not going to convince anybody that 45 minutes is long enough for grains......we sterilize cakes for longer.....

Not as long as you might think under 15 psi I suppose.

You don't need to sterilize cakes, in fact you can make them in the oven or boiling water.

And how long do you boil steam cakes for?

You do realize that using an oven or steaming them still sterilizes them right?

Except using an oven is just going to ruin your moisture content....

Heat sterilizes....whether it be heat from steam or a PC....it all gets you to the same place....please stop while you are behind.....

No it doesn't, you need pressure to sterilize.

And you need to do some research.....you do not need pressure to sterilize...just heat....you could steam grains for 8 hours and get them sterile....or PC for 90 minutes.....you sound like a child.....
