Like the title says, Why do mushrooms in the wild sometimes grow in rings/circles? Is it a mystery or do mycologists know why?

Mycelium expands outward as it grows. Assuming it doesn't hit a barrier of some kind it will expand fairly evenly. And as conditions dictate, will flush in the shape of a circle.

It is a specific species that grows fruits in a ring, along the outer edge of the mycelium. I can't recall the name though.

From wikipedia:

There are about 60 mushroom species which can grow in the fairy ring pattern.

Yeah, lots grow in the fairy ring pattern. There is one species nicknamed the "Fairy Ring Mushroom" however, and if I recall correctly it's edible. I may be wrong, I'm better at farming than taxonomy.
There's no good explanation that I've ever read. They do it cause they feel like that's the best way to spread their spores.
Logically, I can see why. Spores around the perimiter of colonized territory have the most likelihood of spreading the culture over the most area. All mushrooms want to do is eat till they can't eat any more, then fuck so their offspring can do the same.
