Everything is required by law to have an expiration date and an expiration date has nothing to do with bacterial growth, especially when it comes to canned goods. Do you think after 4 years or however long the expiration date that suddenly bacteria just start growing inside the can where there was no previous bacteria before? You can open a can of beans 80 years old and the composition might be a bit more homoginious(sp?) than it would before, but it'll still have just as many calories, it'll hardly taste any different, and there certainly won't be anything present in there that you didn't put in during the canning process. Dead bacteria don't just suddenly start growing again if you give them enough time on a shelf, it doesn't work that way and it never has.

thanks for all the info guys. So notahacker you think i should remove the foil on my jars after inoculation. Should i leave them out in the open or is it ok to store them in a small plastic container?

You have to remove the foil to inoculate, just leave it off then. For the future take it off right after you're done with sterilization.
You can store them in either, but I prefer to leave them on a shelf undisturbed rather than in the stale air of a tub.

I've never heard anyone recommend to leave foil on *after* inoculation, not sure why this seems to be asked so often since no teks I've ever read say to do it.

I wonder the same thing about SGFCs with computer fans and humidifiers attached to them.
If you were building your own airplane you would make sure every little bolt and washer was perfect. It's flying because of trial and error(evolution) and people with experience have delivered the directions and parts in a good working state so you can fly safely. Obviously there can be improvements made but when you're the one making a airplane from a kit you're probably not in the best position to start tacking on upgrades.

Haha, yeah, I can see expiramenting after some grows, but it's like a lot of people set out to make a nuke while not knowing how even a model rocket works.

When you don't have your own experience you should find something your gut tells you is trustworthy through your own investigation. Use the people who developed it's experience and let that guide you without throwing in your own gut feelings because they've likely had the same ones and figured out already that that didn't work. Then you'll develop your own experience and be able to branch out and continue the evolution of your craft.

Not in the US but maybe in some countries.
Food quality can degrade even in sterile food that's the main reason it's added. A lot of organic chemicals spontaneously break down over time.

What kind of food stuffs in the US are not required to have an expiration date? I can't think of anything off hand, and I've been told that by multiple people over the years.

When I worked retail it always amazed me that the johnsonville bratwurst never had an expiration date on the individual packages. The big box they came in may have.
Rice doesn't really expire if you keep it in the right conditions. If there is too much moisture in the air it will deteriorate over time though.

It's actually not a Federal thing the US it's a state thing. Some states require expiry dates on all foods some don't, some even let you sell expired food while others ban it.
I've seen plenty of food with no dates on it before, and I have also seen plenty of things that are not even food with dates, like candles(wtf).

If it's micropore tape is should be fine. Micropore doesn't seem to have a serious effect on gas exchange but it's not really necessary either for that matter.
