Jumping back into WBS

What's up, Shroomery? Circle K here, and I've got a few questions about the grain procedure before I hop back onto my scientific escapades. I picked up a 23 quart PC, and I can fit 20 pint jars in it! I've got all the jars I need, complete with supplies, with everything I need to pull some beautiful looking jars out of the incubator.
Anyway, I was gonna spawn my jars with some coffee to kick up the process, but I don't want my coffee too acidic. What's the process to ensuring coffee's got the right nutes for my mushrooms? I figured I could throw on a pot, sieve the grounds inside, and pour out all the coffee, and make another pot, to be used. Is that the way to go?
Also, I've been putting just one large central hole in my jars, in the top middle. I've found i get away with just leaving some tyvek on them without worrying about contams, but this time around, I want to kick things up a notch.
I appreciate help from anyone!

I read a post by RR that said take the amount you would use for drinking coffee and cut the grounds in half

I'm gonna be spawning to 2QT trays for the moment, at least until I get my hands on some 15QTs, but I had a bit of a problem.
When I PC'd my birdseed, I made a bit more than I think I needed. Filled up a few zip-lock bags and tossed them in the PC, which promptly melted. That should be fine, as a PC kills any kind of germs, and with the tyvek I had on the Jars, I doubt any contams made it inside. Either way, now I have a pressure cooker to clean, and some jars to be mildly worried about.
When I pulled my jars out my first time, they were a little mushy, to where I could squeeze one flat in my hand. This time around, they're still tough, and my jars sound like maracas when I shake them. I soaked 24hrs and simmered, so they should be fine. Each jar got 3CC's from different liquid cultures (Some got a little more, but no less).
I've got them all sitting in my incubator. It's been three days and I haven't seen anything just yet, but I'm gonna give them a while. This is the first time I've gotten to do things fight, and figuring I didn't blow up my pressure cooker, the mycology gods must be smiling down on me!

I would recommend using qt jars instead of pints and just forget about the coffee. It's not necessary and is just another variable

Lids TL's lids, other ones are as easy to find using search too. I just use polyfil and it's been working great for me.
Make sure that incubator is working properly
