1-3 Qt with vermiculite would suffice. As others have said, a mini made with only one quart spawn can easily deliver well over 30g dried fruit in its lifetime.
If I have any question to the integrity of the jar, I would rather mini-mono it and clone the best than to risk larger infections.

i spawn 1 qt grain to 1 qt pasteurized coir/verm a lot so test isolates/strains. I use 4.5 qt buckets, made like a mono tub.

got the idea from blake_shroom here: http://www.shroomery.org/forums/showflat.php/Number/18892960/fpart/1/vc/1/nt/2
he uses a 5 gallon bucket, but only 1 qt grain spawn to 3-4 qts substrate. I love this tek because of the trash bag "lung". u will need to adjust ur hole size if u do a smaller bucket like mine. I use my 5 gallon buckets for mimosa Hostilis extractions, plus the small ones work if u do a lot of strain/isolate testing, u can fit more in a small apt.

Cheese is not a smell you want, bleu or otherwise.......my recent first attempt at grain jars smelled a bit like fermented grain as they were colonizing but when fully colonized smelled like mushroom love........here's hoping!

Dude, it's winter. biological processes all take place more slowly. Why don't you give it some more time to fully colonize, and if it should show signs of contam you can still throw it away.

how big is ur bucket? holes might be a bit big, but then again, I dunno how the dimensions r. Id use two holes at substrate, 2 at top, all holes no bigger than a glass beer bottle top. if its a five gallon bucket, those holes might b ok, but still, just two of them, at least at substrate level (not that this has anything to do with the 2 week thing)
