Second attemp to grow mushrooms (JANUARY UPDATE).

(VIEW BOTTOM OF THIS PAGE FOR THE JANUARY UPDATE, AND MORE QUESTIONS AHAH THANKS)
Hi to all!
I hope you're having a great day. After a FIRST FAILED ATTEMPT I'm trying to grow mushrooms again.
So, I think the first time the problem (infection source) was my syringe I didn't buy from a sponsor. Now I bought from a sponsor so I should be safe.
TO be sure my substrate was really 100% sterile too (and because I lack time to prepare another batch of jars) I ordered pre-sterelized bags. Yesterday I applied some silicone to make self-healing injection ports:

SO, I have 2-3 questions for you all to be sure I make everything correctly.
1. WHen I'll inoculate those things, I will have to flame-sterilize my syringe needle between each bag. Can I do this with a fondue burner? Or am I better with a lighter?
2. Where do I store those bags when inoculated? Last time people suggested me to get rid of my dark warm container. In the dark? In indirect sunlight? At romm temperature?
That's if, feel free to give your impressions and advices if I forgot something, thanks a lot!

Whatever gets the needle redhot and store them on an open shelf getting ambient lighting during the day and remove the vendors name from your post there's an edit button

I'm not sure you're supposed to mention vendors by name....

Jars/bags/tubs/trays should colonize @ room temperature getting ambient/indirect light.
Main pinning triggers are full colonization, FAE and Evaporation off of the substrate.
Light is a secondary pinning trigger. For tropical species temperature is not a pinning factor.
P. Cubensis are a tropical species. You could colonize at 70F and fruit at 80F with great results.
Light has been proven beneficial during all stages of mycellium growth. Mushrooms like mammals have a circadian rhythm.
You want ambient/indirect light(on a 12/12 schedule preferably) for colonization and consolidation.
You want direct/intense 6500K light on a 12/12 schedule for fruiting.
Optimal temps are mid 70s throughout the whole grow, but anywhere from 65F-80F is acceptable.
Incubation is outdated/uneeded unless temps in the range stated above cannot be kept.
The inside of the jar is always a few degrees warmer than the outside because the mycellium produces heat..mycellium tends to stall at temps above 86F , and contams thrive.
Fruiting at cooler temps tends to produce denser, meatier fruits, while fruiting at higher temps will often produce hollow, less dense stems.
Mycelium should be exposed to ambient room light from day of inoculation as has been known for many years. Light is not a pinning trigger until after full colonization and an increase in air is given, and even then it's a secondary pinning trigger. RR

good luck on your next grow Re sterilize between bags for optimal sterilization, but its not absolutely necessary if you do it quick.

Cross contamination can occur no matter how fast you are....
Always flame sterilize the needle between bags/jars.

I always do just to be safe, but plenty of people get away with it all the time.

I am sure they do.....it's still bad practice.

Okay guys, so I inoculated everything perfectly last Sunday.
I think I'm just starting to see signs of development or maybe event not.
My bags are in a 66 F environnement, are you sure I should not put them in a warmer container?
As always, thanks for your help

Warmer would be ideal but not completely necessary.

JANUARY UPDATE
Hi guys !!!
So here is the expected update! After a month my mycelium seem to have colonized all my "cakes", or almost, because some cakes still have non-colonized parts.
As I said in earlier posts, the mycelium seemed to develop rather slowly in a relatively cold environnement, so I put my cakes in a warmer environnement. It gave a big boost to mycelium development, but it stopped some days later. I realized it was the lack of fresh air, so I opened my bags even more (with a microfilter).
So some days ago, the mycelium had taken almost control of all the cakes, but some still had not-colonized spots. So I waited a bit more. Here are my questions:
- The only problem is that now small mushrooms started to grow on my non-birthed cakes. Is it too late to dunk and roll at this moment? Can I do it even if there is small mushrooms growing? See pictures below.
- Is it problematic to have some small non-colonized spots? I can't wait for the mycelium to take control of tyhose spots, there is already small mushrooms growing!
- I have some blue spots on my mycelium. I thinks it's normal. DO I just need to touch the blue spots with a q-tip and if the q-tip is not blue it means it's safe?
- Any other advices for me?
Here are the pictures:

Thanks A LOT for your help guys. I'm so happy I finally have some kind of result.

I'm no expert, but you're not supposed to fruit in the bag right? Isn't the next step to mix it with coir etc and fruit in a tub or tray?

Yeah well this is kinda the problem here... I'm not supposed to fruit in the bags, but the fruiting started while the mycelium didn't colonize the substrate completely (most of the bags are colonized 100% but some other are 90-95%). I normally should fruit those "cakes" into a fruiting chamber, but getting those cakes out of the bags may be a risk of contamination since not ALL the substrate is colonized.
SO yeah the next step is to get those cakes out of those bags and put them in a very moisturized tub, but is it okay if not all the substrate is colonized?
What would you guys do? Should I or not dunk and roll now? Only the 100% colonized ones? Should I wait a bit more? Thanks alot.

Wait until they are 100% colonized and then you are ok to throw into a Fc and put some verm on top, mist and follow a tek for fruiting just till the pins are mature. Then harvest and do the dunk & roll, if you dunk the cakes with the pins the pins will abort. Good job man (: Just started recently myself

Thanks for the answer! Then I'll wait a bit more to get those cakes out of their bags!
