Why Are Cakes Pinning on the Bottom?

So a couple of my cakes are pinning on the bottom of the cake. The bottom of the cake is significantly moister than the top. There is still a significant amount of ferm on the bottom which is of course quite damp.
Also, I am seeing some light blue bruising on the top and upper 1/3 of the sides on a number of my cakes. Stress from being too dry? The closet they are in can get to humidity 25% w/o the humidifier going in there. Do these cakes think they are Australian? I have lots of 6500k 14w light for them 12-18 hours a day.
Many other posts on the topic said to leave it and the cake will flip itself. But mine are on hardware cloth and they will grow under and up through the wire mesh, which would be a problem come harvest time in, what, a few days! (Can't beleive I am finally seeing pins!!!!!!) I've been working on this project for three months, and now there are pins!!
1.) Should I remove the wire mesh and put them on foil before the rest of the cakes start pinning on the bottom?
2.) It seems that a thick layer of verm to hold moisture helps pinning as they cakes still had a lot of their contam layer from their days in the jar still on there. I scrapped off what I could but didn't get too aggressive with it. The contam layer was somewhat moist and well adhered coming out of the jar. Pics attached...

This last pic is of the bluing on the cakes. The blue does not come through in the photo as well as I am seeing it.

i like the wire mesh. If u put the on foil they will be even moister on the bottom, its just due to lack of air. You can flip them if you want or just let them grow like that, its really not a big deal.
