If mushrooms must grow in a sterile environment, why is manure used as a bulk substrate?

Probably a noob question. I'm not a grower and don't plan on growing anytime in the visible future either. But I know that growers strive to reach the maximum level of sterility possible in their substrates. Why then is it that cubes grow naturally on one of the least sterile substrates imaginable (manure)?

after the myc is introduced you can grow and have mold growing on the same sub... it will still fruit. some molds eat myc... the reason we dont fruit with mold on our subs is because it increases the mold count in the grow space. also manure can be pasteurized...

So are you saying that sterilization is only an issue during colonization - and once it's been colonized contamination is not an issue because it doesn't impede fruiting?

Fully colonized substrates are contam resistant....kinda hard for contams to colonize something the mycellium got to first.
Pasteurized bulk substrate material is also contam resistant....this is how we can spawn fully colonized cakes or grains to bulk substrate in open air.
Fruiting is not a sterile process, it is done in open air.

Fully colonized subs are contam resistent but not contam proof, but they get plenty of fresh air during fruiting so the risk is cotained to a minmal

when I was new this was totally unknown to me but now I can say there is a huge difference between "contam resistant" and "sterile".
