What do you say like 3- 4 hours for bags that size maybe 10 at a time?

probably should be fine. i pasteurize straw in open water at 170 for an hour and it works, so i don't see why ur idea wouldn't work. just start the 3-4 hour countdown when water starts to boil, at that point should be only a short time before interally reaches 140, then an hour of that would be good, but going for longer would ensure at least partial sterilization

I don't think you understand. there is no water to check temp just steam from this

check the temp of the interior of the substrate, you may have to use a probe thermometer.

what does interior temp need to be? close to 140? or less or more? for an hour? or less or more? Since pasteurization is adequate i'll shoot for these numbers. Should my bags be impulse sealed or will just simply twisting and ziptieing on doubled up turkey bags work good enough to keep steam out and my substrate's water content in?
after reading this thread http://www.shroomery.org/forums/showflat.php/Number/18769055#18769055 i may aim a bit higher in temp maybe 170 thinking his problem may be the low temps of bucket tek or something to do with his spawn but he seems to be pretty confident about this. what do you guys think?

I use a meat thermometer about 5 inches long, works great when i put it in the center of the jar through the tinfoil lid....stays in the relative center of the jar. You have to keep a good eye on it though because the temps will rise quickly, so you have to time the shut off of the heat, or your temps will go to high for proper pasteurization. Record wht you do so you can change it slightly if you have to.

but isn't proper pasteurization not needed so letting it get a bit too hot is no issue correct? (as long as it's just coir verm and gypsum?) Just ordered this guy for my therm for my steamer idea http://www.walmart.com/ip/Taylor-Digital-Programmable-Thermometer/17167406 just to make sure I know i'm somewhere in the pasteurization/sterilization range which should cook it appropriately

140-160F for an hour internal temperature to call it proper pasteurization you shouldn't hit 170. IF you were pasteurizing hpoo if you hit 170 then you would have to toss it out. With coir you would be fine though

right i thought i clarified just coir verm and gypsum can be used without proper pasteurization. Not trying to send mixed messages ANY OTHER SUBSTRATE REQUIRES PROPER PASTEURIZATION This only works with coir verm and gypsum. believe me i've dealt with the problems of too high temps in pasteurization and it's horrible Please don't ask
