Health of These PF Cakes? And Going Out of Town

Below are pictures of PF cakes I have; B+ and Ecuadore. These are the ones I had rolled in perlite put NOT in a SGCG for three weeks and got too dry. You guys let me hear it for that! Thanks!!
So they have made a recovery after I washed the perlite off and moved into a SGFC on 11-15. But I see some light grey on top of them and wonder if this is some kind of mold? Damage from the misting? Few looked like they have a faint blue tinge to them. I'm in NW Oregon near Astoria and it is wet and moldy this time of year.
They are kept in the closet at around 75 degrees. I added a sonic humidifier to the closet as the cakes were getting dry pretty fast, which helped a lot.
1.) How healthy are these cakes? 2.) They are starting to pin. Do these pins look healthy? They look kinda funny to me? 3.) Are my FC parameters looking correct based on the condition of the cakes and pins? 4.) Photo 0528 has some "rootlike" thing on the bottom. What is that? 5.) One cake has what looks like a few pins reading down? 6.) But I see some light grey on top of them and wonder if this is some kind of mold? Damage from the misting?
Also, Next week I have to be away for most of the day so no FAE or spraying. This is the one thing where the SGFC and I don't get along when I have to go. I have to drive 130 miles a day to fan and mist my mushrooms. So I am stuck between letting them be for 15-18 hours, on their own and hope for the best. Or do I tell my friend who is hear and ask him to care for them during the day and for Gods sake to keep his mouth shut! I'm tending towards leaving them on their own, but as they are pinning I don't want to mess up two months worth of work and patience.
I appreciate your time in educating in all this. I am learning a lot and really enjoying this hobby and already looking forward to growing other mushrooms in the future. They are so strange and cool!!

Your cakes look fine. Got some pins!
I can't see how your FC is setup.
As long as you have a proper SGFC leaving them be for a day or two won't hurt. They might get "fuzzy feet" from excess CO2.

No need for the humidifier, the rh in the room don't matter, your cakes will be fine while your gone just give them some attention before you leave and when you return, if your cakes are a little dry just sit them in a saucer of water overnite or while your gone, I can't see the fuzz you speak of sorry

We went over the SGFC in a previous post, and I got a David Hasselhoff thumbs up, so I know for sure it is great! 1/4" holes 2x2" all sides raised off of support.
How can I tell if my cakes get a little too dry and need to sit in a little saucer of water?
That smidge of grey on the top of a couple of them not an issue? It wasn't there a few days ago.
I have the humidifier in the closet as they humidity in there was in the high 30s at times and the cakes dried faster than I wanted to be spraying them.
