Pretty sure if you process them, like dry or slice, you will be subject to FDA and Health Department rules.

From what I can tell, dried shiitake are more expensive around where I live, never seen dried oysters

Yep, this is what I'm looking at for Washington State. Food Processor. If I sell less than $50,000 of product a year, the fee is $55  You just have to set up a designated space to slice/dry, then outline all your sanitary procedures etc.
Seems pretty easy for how much money you can save by not having to toss the mushrooms you can't move elsewhere.
Personally though, I don't like the way oyster mushrooms re-hydrate. They still feel gummy, even after soaking/simmering for a long time.

I've been wanting to sell dried mushrooms alongside with my fresh mushrooms at the farmers market, so I spoke with the Ag commissioner in California today to ask if I was allowed to sell dried mushrooms at the farmers market. He said I could as long as nothing was added to the mushrooms.

That's unusual compared to most states, where if you process in any way at all, including drying, you need a food processing license.
FoxFire - so you can do that food processor license in your own home? I was told specifically by our local department of agriculture guy that it wasn't something you could do in your own home, but you could rent space in a commercial kitchen.
Of course things are going to vary by state...
And yeah from what I've read oysters don't re-hydrate all that well. Still haven't tried it though.

There are certain local laws about 'cottage industry food' that let you make certain things in your home if it is on a small enough scale. They vary state by state I'm sure, but look into it.
I am planning on designating an area of our (yet to be found) new facility to slicing, drying and packaging. It's going to consist of a stainless steel table, dehydrator, hand washing sink, 3 sink dish system (wash / rinse / sanitize), and all the sani-buckets and gloves that health inspectors love to see lying around. 
Or, you could just do it and wait till someone gets bent about it... "Sorry there officer, I didn't know I couldn't do that..."

Right on, sounds like you're about where I'm at info wise. Hadn't heard about the "cottage industry food" thing though, will definitely have to check into that. Actually ran into a guy at a local farmer's market selling tinctures, although I didn't think till later to ask him about the legal business. Guarantee he wasn't doing it by the book. I think a lot of people just do what they will and hope to stay "under the radar". I've looked into getting the licensing for processing though and haven't come up with much, but figured they'd want the 3 sink thing, stainless and all that, just like you mentioned.

I dry a lot of produce (this is UK so regs are simpler.). If you are going to grow mushrooms commercially you need to dry or get a lot of waste!
A domestic dehydrator will be too small. I have both a large (7ft tall)commercial fridge that I modified and a stainless warming cabinet also modified with a fan. I can dry about 40 kg at a time. I store them in a freezer at -22c. I sell a bagged mix of coloured oysters and Shiitake at farmers markets and farm shops. They do really well. For xmas we are doing fantastic looking jars with dried mushrooms. Re-hydrate for half an hour, keep the soak water for stock and pan fry the mushrooms for 10-15 mins on a high heat before using them in stews, risotto, casseroles etc. You don't get as much per (wet) kg as you do for fresh - esp when you factor in processing costs, but it's 100% more than throwing them away. Also it means that you are not tempted to keep your fresh for too long so customers always get good quality from you.

Waste is actually a really good subject regarding commercial cultivation. Solarity how much of your harvest will you eventually have to throw away/dehydrate ? Guesstimate a percentage if you can please..
