Anyone ever try hummus made with sprouted chickpeas?
Take dried chickpeas, soak in warm water until soft, drain, and put most paper towel over them and leave them at room temp. Rinse them with fresh water and change the paper towel ever 12 hours. in a day or two they will sprout. then use them in any hummus recipe.
Makes it easier to digest, and super tasty. Impresses company to see the sprouted chickpeas as well.

Do you have to boil dried chick peas, or is soaking enough to get them soft?
I do dried Kidney beans and black beans and you have to boil those bastards, I soak them too usually.

What's wrong with using non-sprouted chickpeas like everybody else? I would think there could be health risks with sprouting them...

You don't have to boil them. And sprouting them isn't a health risk, they grow a root, and a plant sprout, just like anything else. As long as the bean is safe to eat raw, sprouting is safe. Ever eaten bean sprouts? They are sprouted Mung beans, and are safe to eat. (as long as they dont become contaminated like some commercial bean sprouts can be)
Essentially they are microgreens except not planted, and not sprouted as much. And being a chef I can tell you those are fine to eat.
Although when it comes to beans, only certain ones can be eaten uncooked. Others contains chemicals that are hard to digest, and cause bad stomach issues, even poisoning. Heat breaks the chemical down and makes them safe. It is the same reason slow cooker chilli can cause bad indigestion, there isnt enough heat to break down the phytohaemagglutinin.
