Pasteurization accident

While I was pasteurizing my sub I forgot to turn my stove off after the original temperature inside the jars raised 15 degrees F. Needless to say the temperature climbed over 160 F before I had realized my mistake.
So in attempts to salvage my 8 quarts of sub I quickly poured it all out into a large bowl, put a thermometer in it, and set a stop watch to see how long it took to go back into the 140-160 F range. Luckily it only spent about 5 minutes in the 165-170 F range. This is still salvageable right? I'm gonna load the jars up again and try to pasteurize without fucking up. I'd hate to have to make another batch of substrate.

Its fine. Just make sure your substrate is still at field capacity and re-pasteurize!

If it stayed between 140-170F you should be fine.

Thanks for the quick response guys!
This will be my first attempt at a monotub. I've spawned to bulk plenty of times in my GH so now I'm ready to put all my eggs in one basket. I've got a nice clean PE culture to work with, all the jars are 100% colonized and appear to be contam free (we'll see after sniff test). Just want to make sure my pasteurization is good so I don't fuck up this grow.

with my limited knowledge of pasteurization, id say youre alright. As long as it doesnt climb above 170F, it shouldnt become sterilized in any way

I've had a substrate survive past 170F. It happened one night when I got distracted by a six-pack.

if it happens again just dump some cold water into your bath it will slow things down pretty quickly

I've also heard that coir is pretty resistant to contams naturally so if it gets to 170 it's nbd. Although I did have about 30% cow manure so I was a little worried.

I've actually dumped cold water into the pot before and that works great. However, in this scenario I didn't even turn the stove off until the jars were at 160 so I knew it would quickly climb well past 170 despite a quick change in water temp.
The saddest part is that I used a digital meat thermometer that alerts me at a set temperature. I just totally forgot to turn the stove off when it alarmed
...Another sad part is that I was completely sober lol
