No pins developing after many weeks

Hello All,
Apologies in advance for my ignorance (complete newbie here). Your patience with any clumsiness on my part will be MOST appreciated, as this is my first time posting to this or any related forum.
I had two fully colonized 3 lb multi-grain spawn bags that I birthed; the first over 8 weeks back, the second about 3 weeks ago. Initially, they were both all covered in fuzzy white mycelia (Penis Envy). I elected not to roll in vermiculite. They looked great - more recent one still does. However, the fuzziness has all but left the first - it's all white - yet still no pinning. I think I see the smallest indications of hyphal knots on the older one, but very hard to say. I'm fanning several times a day; using a shot-gun terrarium; elevated air circulation. Ambient temperature at about 70 to 72 degrees. Attempting to maintain 90 to 100% humidity (although I question the accuracy of the gauge). Anyway, I have to convert some jpegs to another format before I can upload them here (although I didn't want to wait before posting query), but the second one has developed a bluish tinge (definitely bruising) and I'm wondering what I'm doing wrong that keeps pinning from occurring. Admittedly, I've noticed some similar posts, but none indicating the protracted length of time I'm experiencing. Help please!

Grains on there own are hard to fruit. its not the same as a cake .I had a quart jar of wbs that I treated like a cake with no results for 2 weeks.
Then i spawned it to some coir and fruits blasted through as soon as it was colonized.
I am a newb too so dont take this as solid gold info, type in straight grains in the search bar and see what you can find.

Thanks, man. I'll explore using coir with the older one first. Idiot question here, but would you have any recommendations on how to proceed? e.g., should I cover the fully colonized grain with it?

fully colonized is as contam resistant as it gets so pasteurize some coir/verm (some peeps here dont use verm and have success.
use a 1:1 or 1:2 ratio of spawn to coir/verm i would go 1:1just because its faster and if your still learning like me then faster = a bit less weight but i higher chance of success.
break up the bags as much as you can ( if there still in the bags) and mix it with the pasteurized coir.
if there not in the bags it doesnt matter just crumble them up in a tub with the sub.
are you using a sgfc or mono tub?
the answer to that determines your next step after mixing

Using SGFC - hence my uncertainty with the application process for coir in this instance. Figuring I just roll the grain log in it?

find an assortment of small containers and mix the sub and spawn in them, you are making cakes out of your grains you can use anything that has a lid that fits pretty good.
i am currently making small 5x9 tupperware containers with a plastic liner on the bottom.
mix all your sub and spawn then put them in the containers. with a 1:1 ratio the will take over the sub you added in a matter of days. and once they are 100% you pop them out of the containers and put them into your sgfc.
essentially your making cakes they just hold more moisture wich provides the micro climate you need to produce fruits
