Quick boil for rye question
    #19158300 - 11/19/13 04:35 AM (10 years, 2 months ago)

I have recently had trouble boiling larger quantities of rye because it takes too long to boil and reaches an undesirable simmer for too long of a period. I was wondering what is the largest quantity of rye you can boil in a pot and still reach a quick enough boil to get the desired grain composure? I would test this myself but I am about to have quite a bit of rye to prepare and would like to waste as little money as possible.

Thanks.

I've boiled 33,000ml of rye in a 55qt stock pot on a 12,000btu

propane burner and it worked just fine.

Not a problem.  Just bring it to a boil and then dump it out and shake around in the colander to steam dry before loading into jars or bags.  It doesn't matter if it simmers for awhile before boiling.

I've ran into the same issue. I solved it by dumping out my cold soak water and replacing it with hot tap water. Having hot tap water in your stock pot will get you up to boiling temp much quicker

just cut back on your soak time before you do the boil. i found 24hrs to be a little too much and would get bust grains during the boiling process. only soaking for 15 hours however, my grains come out perfect every single time!

but i'd be dumping out my coffee and more importantly my gypsum. even if i were to add more gypsum to the new water, this is just completely unnecessary ime.

I solved this problem by using 2 pots. This saves some time. But it really don't matter much how long it takes to get to the boil.

Awesome. Love getting feedback from RR. I will try this. My problem was I was waiting for a boil and then letting it boil for 10 minutes.

To clarify I soak 14-16 hours depending on my schedule and agree 100%

...How do I get it to say, so and so said this before the quote? Something I should have asked a long time ago.

As long as you soak at least 4 hours, you won't get burst kernels.  Be sure to rinse and begin the soak in hot tap water.  Use full hot, not warm.  This will hydrate the grains in three to four hours.  The boil gets them hot so the excess moisture can steam off, leaving them perfect to jar up.  It also serves as a pre-sterilization of sorts for those pesky endospores.

I might get bashed for this...I'll hold my breath...

To avoid this simple problem, I have just recently started washing my grains very thoroughly and then pour boiled water over the grains. Wait 6 hours and they are at field capacity. Strain the grains and load. That way I can just already have by boiled water ready and combine the soak/simmer.

Any problems with this method?

I bring the water to a full boil, then dump the grains in because i was having the same problem as OP. Its like it takes FOREVER to boil because all the mass of water and rye thats in there and in the end makes it all sticky/starchy and makes the grains clump together. I'll test a batch where i boil straight from the soak water to see if i just didn't rinse them good enough the first time or something.

That was going to be my solution if I couldn't find any other way but I think its important to maintain the 'broth' water. I have boiled from the soak water with perfect results before on smaller batches. I am positive the issue is from the amount of simmer time involved with a larger batch. I was also under the previous impression I should boil for appr. 10 minutes but RR has said to just bring it to a boil and then strain. I'm betting this will solve the problem.

So far it has worked fine with WBS. But I have recently started using HRWW, so when ever these next jars fill out(should be within a couple days) Ill prep some HRWW my way and see if it works for a G2G to 8jars. I get really mushy grains when I use RRs standard tek for rye berries on my HRWW. I have no idea why:shrug:
