You say remove the foil after inoculation. Should I remove the masking tape on my jars as well?

Doesn't matter as long as the masking tape isn't obstructing gas exchange. I'm assuming you mean that you put masking tape on for the boiling and then inoculated through it and left the holes open. If you applied fresh masking tape after inoculation then you should remove it.

My jars are at about 80-85% colonization 17 days after inoculated. I am leaving this coming Friday for a week. I think the jars will be fully colonized Wednesday. My question is should I leave them be in their jars in the incubator for a full week without me being around, toss them in the fridge to pause myc for a week, or spawn to a bulk? Remember first grow, first cakes.

If your jars are colonizing fine then change nothing. They will be fine for one week with or without incubation but absolutely under no circumstances should you put them in the refridgerator. Just leave them where they are and enjoy your vacation and FORGET ABOUT THEM while you're relaxing.
When you get home you will have a nice surprise of fully colonized jars.

There have been so many discussions about putting them in the fridge to stall the myc. Then taking them out, letting get to room temp and birth them. They will be fully colonized by this wed just not consolidated, two days before I leave. Just worried is all, I would rather not mess them up.

Trust me dude. Just leave them. Don't put them in the fridge. They need to consolidate for a week after full colonization anyway. You have nothing to worry about.
Just to clarify, consolidation needs to be AT LEAST a week. Even RR says a month long consolidation is better. Your cakes are going to be fine.
You may even have some cute little pins when you get back.

If this were true, pf cakes would always produce the most potent mushrooms for a given set of genetics, since we consolidate them for at least one week.
And wouldn't invitro pins be the most potent as well? 
This has not been the case IME.

Future advice, from one to another(OP),
Make your own jars, don't do cakes in anything larger than 8oz, patience.
Jars are looking good bud. Probably would have been quicker if you had gotten smaller jars.

To clear up any confusion, I don't believe Frank was recommending refrigeration. Don't refrigerate them.
