Birth of a new SHIITAKE FARM! Suggestions WELCOMED!

Below are pictures of our new Shiitake Mushroom farm at our Sanctuary- a non-profit, healing and educational center dedicated to the community. The logs in the picture are a red oak and two other unkown oaks. All were cut down 1-2 weeks before inoculation, allowed to dry slightly then inoculated with Shiitake plugs purchased from Fungi Perfecti-great source. After drilling holes 1 1/4" deep and 4" apart in a diamond pattern and using a light tapping to hit the plugs in place we covered each hole, as well as the ends of the logs with wax.
One concern is the timing we started this process. It is early November and the temperature has already begun to dip past freezing point. Therefore, these newly inoculated logs are resting inside the house for the next 3-4 weeks before being transferred to mini hoop-houses for the rest of the duration of winter. Hopefully there the tempature will be of a suitable temperature till spring. Any thoughts or advice as to when to/how to transfer them from inside to outside? Any signs to look for for healthy growth of the mycelium before we put them outside? What are suitable temperatures for a 5-6 week old shiitake log? Thank you for time and thought!!! Bless

P.S. This is being done in Southern Connecticut. The hardniess zone here is 6a. The temps right now during the day are around high 50's and the nights are around 30's.
