Confusion with RR's pasteurization tek

I watched the video on YouTube and as far as I could tell, he didn't put the lid on the PC during pasteurization. Also, it says "boil until substrate reaches 140." So I filled the PC with water about 3/4 of the way up my substrate bags and boiled until the substrate reached 140 with no lid on. I managed to keep the core temp under 160 for an hour but now I read his notes and he says to use the lid, and only to boil for 1-2 minutes and then let the temp climb while the flame is off. Obviously using the lid would be better to ensure more even heating but will I be alright or did I most likely not heat the top portion of my bags to proper temps?

Sounds like you did it right...  RR sez to get the core temp of the substrate to 140... then turn off the heat.  The temp will continue to rise -- should it fall to around 140 to 145 or so, turn the heat back on for a bit.    You want the temp to be around 160-165 for at least an hour.  With bags, you'd want to weight them down so they are in the heat.

I think he uses a "sub lid" from his pressure cooker -- one that may be useful in "canning" -- it looks useful because it holds the thermometer in place.

Well I did 2 separate pots. 1 of them worked out like I said, probably because it had more substrate in it, and also because the lid was off the entire time. The other pot had the same amount of substrate but it was split into 2 separate bags and the lid was on the pot. I turned the heat off when it hit 140 and it climbed to 165 in like 15 minutes and I had to take the bags out of the pot just to keep the temps where they needed to be.

The 'procedure/tek' is just a guide for the first time or two you do it to get you started.  The bottom line is to have the center of the substrate at 140F to 160F for an hour.  You have to adjust stove settings as required.  If it helps to have the lid on, do so.  I usually do unless I'm checking the thermometers.

Shout out for RR's DVD's, too...  they don't cost much, are high-resolution, can be watched and rewatched for reference, and purchasing rewards one of the best of our very own.    Plus, maybe he'll take the money and write a book about snake venom agar or just bask in wealth as is his due.
