pan searing a roast-help

i wqas told to put oil in a pan, sear the roast with salt and pepper and put into oven

but i was thinking of using brown sugar and salt, can i do this?

need an answer in the next 30 min

The brown sugar will caramelize and likely burn if you try to sear with it.  You can add the brown sugar when you put it in the oven.

If you use the brown sugar to caramelise I'd wait with adding that until it goes into the oven.

Yeah definitely dont add the sugar before hand.

Also make sure your roast has come to room temp before cooking it, and also let it rest 15 minutes before cutting into it when you take it out.

also take it out 5-10 degrees F before the desired temp you want.

If you want want medium, take out at 135f. While it is sitting the internal temp will rise 5-10f to the 140-145f for med.
