Rye moisture content.

So I started the soak simmer and dry part of my rye and realized I don't have my PC available. How long would rye keep just in the jars after the soak but before the PC before they go bad?
And tips would be appreciated. Thank you!

I would keep them no longer than 24 hours without PCing them.

I have kept my WBS in jars all day and night while waiting for their turn in the PC.
I would be willing to bet rye would be just fine for 12, or even 18 hours...I mean you're killing everything regardless....

I'm glad I'm sparking some what of a debate lol. I'd love to find out the window of time I have to work with whilst handling these bad boys.

I wouldn't keep them more than 24 hours.
In my experience, rye starts germinating when sitting too long.
A germinated grain causes the same problems as popped grains...a sticky mess.

Refrigeration will give you more time I'm sure. Maybe you could run them through the dehydrator if you need to?

not to mention the energy the grain spends to germinate, but they normally don't germinate after the simmer or even if you used hot water in the beggining of your soak with weak coffee
