I appreciate the fact that you have done your research(it shows), and can actually follow directions....it makes this soo much easier.
Welcome to the Shroomery!
Looks to me like you are doing everything by the books(others will chime in if I missed anything), sometimes this just takes time...
Keep misting and fanning the cakes....Mist the cakes directly with a fine mist until they glisten, then fan out the chamber.
Mist again once the water you previously applied has evaporated, followed by fanning out the chamber again.
Other than that, there is not much else you can do....temps are fine, light is fine, chamber looks perfect. there is enough perlite, It is in a closet but that should be just fine.....
Just keep up with the mistings..and good luck.....

Op, I have to say, that's a top notch first post. I don't recall a better first post, especially when asking for help.
Like has already been said, sometimes you just have to be patient.

I thought it was a good thing to keep the cakes close together as long as they still get enough FAE? Can someone speak to this - I seem to remember seeing this picture from RR's gallery with a blurb about them performing well like that?

You've done everything right, all you need is patience. Listen to notahacker420 and the trusted cultivators, and keep following the tek without deviation and you will be successful.

Nice first post.
--------------------
Anything I post is purely theoretical, and not based in reality. All pictures are from google. A big part of me has died inside and I don't know if it will ever come back. Nothing makes me happy anymore. I use drugs and alcohol to numb the pain, and my sense of humor to hide the rest. I don't share these feelings with anyone in real life.

Thank you all for the encouragement...I greatly appreciate it. Will post pics (hopefully soon) when some pins begin to appear. Patience is a virtue, as they say...
As a side note I have another 5 cakes left that are ready to birth...Figured I'd go and (if I can find a nice small containter) spawn them to coir in a mini mini monotub, or failing that spawn to coir in an aluminum tray and fruit that in another SGFC. I figure this would be a stepping stone into my ultimate goal, which is bulk growing in monotubs. I figured that since I've done PF grows in the past I'd stick to that my first time back until investing in a PC...hopefully it goes well. Thanks again everyone!

Congrats lovie! Doesn't it feel so good when you get your first pins on your first grow? Your whole body starts thrumming with energy and you're like "Hell yes! I DID this! I DID THIS!"
Great work!
