What's a good legal mushroom that's a challenge to grow? I asking this because I need to push myself to next level. Cubes are no challenge.

Maybe you two could help him cultivate a smart ass attitude. Seems you've got it down pat!
Just kidding, now I'm the smart ass lol. 
On a serious note OP, try a couple of the more common edibles like Shiitake and the various species of Oysters (king, gold, blue, pink). Once you get those down, try some more novel species like Maitake and Nameko.
Don't be in too much of a rush to get in over your head, it will happen regardless. That's how we learn!

Some species that come to mind are Lepista nuda or more interestingly saeva which is a grass grower and I am told can be cultivated but doesn't thrive on conventional agar recipes.
Giant puffballs might be interesting?
Trying Marasmius oreades on rye grass seed or manure?
Or morels if you want a frustrating challenge?
chicken of the woods can be somewhat fickle as well or at least I am told that.

Strange as it sounds I am looking for the frustrating challenge thanks everyone I'm not the kind that go big until I'm confident with small.

I like the cut of your jib, sir! Go balls deep or go home. Yes, failure is eminent when you take this path, but if you don't mind failing from time to time then you can really get a sense of your limits. Might I suggest an easy strain, say oysters, but play around with substrates. Or experiment with culturing out mycorrhizal species.

Drake, not to thread-jack Enigma's thread but any good info on indoor chickens would be awesome. They are my favorites, so far. What substrate mixtures and fruiting conditions have you tried?

Where are you from? In my country growing poppies is legal while things like cucumber, potatoes and water is illegal...

i've followed the paper published this year almost to a T, except I used only wheat bran instead of the mixture of different brans. Got some fruits this summer. Also got some last week, so 45-90F. I think the humidity may be a constraint. Or maybe I haven't tried the right strain yet. I got some more to play with recently.
