Air conditioners usually dehumidify....this is the exact opposite of what you want for fungal growth.

Well if I place the unit outside the grow room, and just one of the pipe things going into the grow room, then the air going in would be somewhat dry, but at least it wouldn't be pulling the high humidity air out. It's tough to find a way to cool down the grow room, without actually dehumidifying the area. Its already somewhat humid outside, so a swamp cooler wouldn't work.

No, it would be pushing it out.....or watering it down.....however you want to look at it.
The goal here is HIGH humidity.

Why would you need to cool the grow room first of all?
What are your ambient temps?
What species are you growing?

Well I am growing oyster mushrooms. Most likely grey and kings. The temperatures get to be over 90 degrees during the summer, so I have to find some way to cool it down. I was thinking maybe I could use a mister instead of trying to keep the humidity high. I forgot to mention that this is for an insulated outside shed. I currently don't have ac or anything running to it.
