Question about pasteurization

Should one close the lid of the pot wen pasteurizing? Also shud one bring the water in the pot to a boil first (so as to kill any bacteria in the water) and then bring the temp down to pasteurization temps (140-160) and THEN dump the substrate in the pot ?

Put it in jars.  Don't boil water.  I get the inside of the substrate to 150° (water is around 180-190 at this point), then turn the gas off and wait an hour.  I do put the lid on to hold the heat in and check it periodically.

i leave lid on whole time from as soon as i turn on the heat.

i also use the thermometer that has a long wire to a probe so i dont have to open pot

also has wireless alarm so you know when you hit your target temps from another room.  its the tits
