What is the coldest weather you can hunt in?

Well, coldest weather they can live in I guess.  I'm guessing up until frost?  Or up until freezing?

A lot in my region say they're around through Dec but I don't see that as possible.

up until more than a few consecuive nights of hard frost/full freeze.

Would you say about the time the garden is completely dead or still a while after that?  There hasn't been ice yet but there's definitely been enough frost to murder the vegetation.

about -20°F but you have to have really fluffy clothing, but you would most likely be caribou hunting.

That depends on which weather kills your particular garden plants, doesn't it?

In that vein though; I'll say that the weather which makes my kale perfect usually signals the the end of season, though you should remember that that still gives the mushrooms which have already fruited at least a week before they die off and/or rot.
