Acrid smell coming from rye spawned jars

I have several jars inoculated with PCs. I noticed my incubator smelling weird so I smelled the cap (protected with polyfill) and I noticed the smell is coming from inside the jar.
The interesting part is that the inside of the jar looks fine. It's fluffy-gray and a couple of days from being 100% colonized. I looked at it from all sides and there are no signs of bacterial infection.
Speaking of bacteria, I'd expect something nasty and rancid. This is different, it's more weird/acrid. The only explanation that comes to mind is that this is the first time I added gypsum to my rye and I added a lot of it (a tablespoon to 600 grams). I noticed the mistake and rinsed it several times, but I don't know.
Your thoughts? Should I dump it or wait?

Bacterial contamination can take a few forms. The only bact contam I ever saw on grains was Within them, and thus was not visible, even allowing mycelium to colonize over the surface... but they wouldn't "dig in" and when (spawned did not recover/fruited did not grow, just smelled), ruining the attempted grow. Mine were due to incomplete sterilization; yours could be that or contaminated inoculant solution. Trust your nose and your instincts. I say toss the smellies.

the acrid smell doesn't sound right and your description of 'fluffy gray' is troubling.

Here's a picture. It looks pretty much the same from all sides, with a thicker, fluffy growth on top.
I wanted to toss the jars yesterday, but I wanted another opinion.

Yep, can't tell by looks... and when you can't tell by looking, you tell by smelling.

I agree with Violet.
The colonized rye in your pic looks fine to me ... but it should smell 'mushroomy'. ... bad smell ... discard for sure.
when I dump a bad grain jar; I do it outside, way 'downwind' .. I stand upwind .. dump the jar, get the jar washed up .. change your clothes and get yourself washed up before doing any serious mycology.

I've had the same problem with good lookin myc and a mildew smell like stagnated water.

I put the jar back in my pressure cooker for a couple of hours to kill whatever is in it. Do I still need to take extra precaution?

No. Frankly you don't have to take any precaution anyway. You don't have to worry about environmental bacterial contamination the way one would be concerned with mold spores like Rico mentioned above. I just dump-out bacterial grains however/wherever.
