Hi everyone 
Straight to the point: the question I have is the name of my topic

So whatever is knocked up in there, in the center, like in a petri dish, has 93% of the jar as "air" from which it can get its "air exchange".
Could this container be "knocked up" and made airtight for a few weeks, while still allowing mycelium to grow? ..... because of the large air reservoir is has access to?

It depends on what you're doing. If you're doing agar, you won't necessarily need GE if you're not planning on keeping your culture very long. If you're growing cakes or grains, or storing a culture long term, you most definitely need GE.

^^^Entirely disagreed.
Nothing I grow has GE - neither my colonizing grain cakes nor my refrigerated agar containers. They all have plenty of gas to allow the full process.
A quart jar loaded tall with grains is quite likely to need a tiny bit of GE, but beyond that nearly nothing requires it per se.
jpack666, the scenario you described will nearly certainly do just fine air-tight.
