My first pocket knife EVER was an Opinel I bought in Belgium when I was eight. Very good choice - I still have mine over 2 decades later. Make sure you dry it and clean it every time you use it and it'll treat you well for a very long time. It keeps an edge as well as any other knife I've ever owned. The high carbon density means preventative maintenance is key to its longevity.

I currently use a SOG multi-tool w/ assisted opening blades for damn near everything, including mushroom hunting. http://www.sogknives.com/powerassist-eod-multi-tool.html

I appreciate having both a full serrated and full straight-edge blade that open in an eye blink, and SOG's blades are manufactured to the best standards in the business. they can split a .22 caliber bullet fired at them head-on, and they keep their edge, but are predominantly stainless or composite, so you can treat 'em really bad and they'll still treat you good. All the extra tools can be switched out for anything they carry with a simple hex-key, including scissors. The pliers double the strength of traditional pliers through a gearing mechanism, so you can chop through nickels like paper with the wire-cutters and ticks don't stand a chance when you want to pull 'em out of your skin after a long day hunting. The $120 price-tag is worth every penny, but you can pick it up on Amazon for about half that

That Opinel is class! 
Still only carry my bargain Swiss-type pocket knife (the wine opener being used as frequently as the blade) and a soft children's toothbrush for wiping my finds.

I'm working on a set of custom mushroom knives. They're be basically aikuchi tanto with brushes, and with my own style to them in a modified shobu-zukuri.

This is the knife I use. It's an old Finnish knife that I found in my grandfather's attic. Sentimental for sure, and sharp as a razor.

I'd love to see 'em when they're done. I carry a soft, flexible neck toothbrush with the bristles cut down to ~1/2 - ~3/4 of their length, tapered from short on the outside to longer in the middle for that aspect.

I have a carpenter/biologist/chef friend who is currently developing some custom wooden headphones for my studio work, and I'm thinking to ask him of the possibility of making me a set of kitchen knives. Perhaps I'd better push him for a mushroom one as well. 
DCart: Your knife looks very similar to the Sápmi-knife I had as a kid - it had a longer, machéte like blade however. Clearly a versatile tool.

Usually I'm a low budget guy, but when it comes to tools, I tend to spend enough to be sure I'm getting something I can depend on... That being said, my multi tool gets used for damn near everything, not just mushrooms.

I like a value-buy when it comes to knives, but I have to say, I'm glad to have been able to break the $100 mark for my work finally.
You wouldn't believe how many hours of work go into an 40-80 hand made knife.

Iaido and kendo are the shit. I've never formally sparred in kendo, but with the iaido practice I've had I think i'd be alright. I also rock climb and it really helps your grip on a sword. There are some katas involving two swords, which is some insane shit.

I've made a couple really basic knives using a home-made forge and tools just to see if I could. I can definitely believe that once you get to the level of craftsmanship your work evidences (at least in pictures,) its a pain in the ass (and hands, and forearms, and shoulders.) But I bet it's really rewarding too.

There are some interesting "sandstone" dwelling fungi I'd love to get checked out. The micro-habitats in some places are insane. I saw a bolete growing on a cliffside once.

I'm a huge fan of Scandinavian blades. Single bevel is the bee's knees.

I've got a couple of Morakniv blades lying around, just picked up the companion MG the other night. The easily cleaned plastic sheath with a drain hole in the bottom is a big plus. It sticks in there well enough not to fall out when running or climbing yet still draws easily. The handle is non-slip which is awesome when things get wet....or bloody
Can't beat the price either, $16-25 bucks depending on the model.
Fair warning though, this knife has a single bevel instead of the standard American double bevel so NO USING DRAW SHARPENERS! Stone only.

it was in cattle-grazing land, I'd be able to identify it if I saw some pics, but I can't find any for the three said to grow out there. They worked really well, even in really small doses.

I use a badge retractor thingie from the dollar store, remove the badge/cheep attachment and replace with a keyring, hang a biner off of that. Then hang a cheep light thin serrated kitchen blade and a .5" round nylon bristle paintbrush from it, drill a hole in the ends and put keyrings on them. Easily removable. Clip that to your belt - and you've got your tools at hand without having to deal with a sheath or pocket or unfold/fold... One handed operation. And if you lose or break something, no big loss.
I have some beautiful knives but I'm not willing to take them in the woods where I'm distracted and might lose 'em.

I use my pocket knife!!! An Old Timer 125OT!!! L6 tool steel biache, liner lock, flat ground blade and ergonomic grip. 1/2" longer than the Buck 110 and not "hollow ground". And this design is about a hundred years old!!! The Schrade company sold to Taylor (China) in 2004. Accept no cheap imported imitations. Real USA made Old Timer knives can still be found at auction sites for a premium. I have a couple in reserve for use as mine wear out since I carry them as tools. Best real world tools on the planet. Good steel, not too spendy or fancy that your afraid to hurt 'em in use, and they get sharp and hold an edge. I'm 45 and I've had a USA Schrade Old Timer in my pocket since I was 12!!!

I still have all my old knives from when I was a kid-O! Old Timers are awesome. I have a tri-blade version, dunno what its called. Also, a nice single blade antler grip Uncle Henry pen. Simple and efficient.

Yupper! The first pocket knife I carried was the Old Ttimer model 8OT. A three blade "stockman". I have two. It's my usual carry rather than the 125OT but I haven't gotten around to cleaning the rust from my regular (left it out in a drizzle ) I like plain carbon steel better than stainless most of the time, but rust abatement sucks.

I was carrying a schrade 225h for awhile, but it's way too much knife for me on a daily basis. Heavy little bugger. They stopped making 'em in '73-'75 so I didn't want to lose it or screw it up in the dirt. I thought it was just some supercrap in my toolbox and decided to clean it up for shrooming, then realized that it wasn't crap when I noticed the brass liners.
'Bout the same size as your old timer, but 2 blades and "stagged" handle. Not sure if that's real staghorn or bone...

SOG's a good ol' USAnian company that makes the highest quality mass production knives I've been able to find, plus they have the added benefit of still being in production

SOG is great stuff. Schrade made working man's knives. Tough and good materials but not long on cosmetics or fineries. As far as not wanting to mess up an Old Timer by using it in the dirt... All I can say is that I'd like to see you try!!! Tough, TOUGH knives. Just wipe it off and oil it at the end of the day and it'll serve you for a long, long time. Wear is of minimal concern because they're made of VERY good steel. I've been using my 125OT daily for about eight years and I keep it sharp, so it see's a stone about twice a month. At the rate it's wearing I expect it will last another fifteen to twenty years!!! I'm not even kidding.
EDIT: Schrade only used real stag horn on select commemorative knives. You'd know if you had one. All the Uncle Henry knives had "Derlin" (a kind of bonded resin plastic) handles fashioned to look like bone or stag antler. Like I said, working man's knives.

I have the updated version of this that includes a spoon 

I actually did find a backpacking knife with a spoon on it while mushroom hunting, I thought it was pretty cool.

LOL no, I used to use a K-bar for hunting. I was just saying I liked the way it looked better and it probably could but usable depending on what kind/style you buy lol.
