Made the cakes, but can they wait to be steamed?

Hi, just made 10 cakes this morning but i have to leave for work soon and dont have time to sterilize them on the stove. I was wondering, i didnt put holes in the lids yet, if im not able to do it till tomorrow do you think the jars will be alright, sitting around for a day? Also heres pictures i took of two of the jars, 7 of the jars are like the first pic, the other 3 are a little watery, should i remake them?

i reckon they'll be ok and you should just leave them as is to see for yourself if there is a difference when colonizing.they lose alot of water while they are incubating.my foaf left the lids loose while he pc'd em and they looked a little wet but they were fine.

hmmm k, and another question.. i dont have a pressure cooker or access to one, ive read that if i just try steaming them in a normal pot with water that it may not do the job... is this true, what can i do. I dont have the money to spend on a pressure cooker :frown:

put it this way...with a PC you can get at least 10 out of 12 jars with no contams, since my foaf got his pc he hasnt had a jar contam at all, but when he steamed his success rate was like 2-4 out of 12...so yes it "will" work, but how well is another question.

Maybe i should dump out these jars i have, and keep working on trying to find a PC and once i do, then remake the cakes and steam them. I dont want to end up wasting that much :frown:

well...wouldnt just dumping them out be a waste also? you never know unless you experiment, just make sure the jars are not directley touching the metal of the pot, put a rack or a dishcloth or something down.

ive heard that the chances of contamns are higher when boiled because boiling doesnt kill off some bacterias so you are putting more luck and hope into the equation.just make sure your foaf covers them with 3 layers of heavy duty tinfoil when doing it so no water can get in.and before you do it put the holes in and seal them with good electrical tape or heavy duty silver duct tape.it can work just boiling but the risks are higher.start saving for a pc cause you will need it when you start doing grains.

ok ill give it a try with just a regular pot, but i may not be able to for a day or two, im just hoping that the jars with the mix in them can sit that long without getting mest up or anything. I wasnt sure if it was alright to have them sit, or if you were suppose to sterilize right after. ill keep my fingers crossed, as long as i can grow enough for myself to try it once i will be happy. cause ive never tried mushrooms.

I have had problems with steam sterilizing in the past. I just bought a 4L PC at wally world for only $17. I would HIGHLY recommend a PC, it just makes one more step of the process fool-proof. I wouldnt recommend letting your jars sit for more than a day without sterilization if ur using steam. If you had a PC, it wouldnt matter, but steaming can only get up to 100 degrees C and wont kill Bacilus endospores. They may start to smell a little sweeter than usual after letting them sit without sterilizing them. Just try it out and see. Ive had lots of experience with this type of situation, so if u have any more questions, feel free to PM or post again.

They're already contaminated. There's crap growing in them right now! They got contaminated when you mixed them up. If you can't cook them up right away put them in the fridge, that should slow down any contaminators until you get around to cooking them up.

What did you make the substrate out of? It looks very chunky, almost like dog food or something.
