This has been been colonizing for about three weeks and still isn't 100%, what do you guys think I should do? fruit?

Can't see any obvious signs of contam but it's nowhere near 100%. Leave it another week and update

This is exactly why it is important to make sure the spawn is evenly mixed in with the substrate.
I am doing a run of 12 tubs using a 1-3 spawn to substrate ratio(4qts of spawn ber brick of coir +3qts verm).
They are taking no more than 10 days to fully colonize. I am using an isolate, but still...something is not right, even for MS.

This tub looks dry to me. 
Try to get a close up of the top of the substrate, and post that here. If your water content is correct, you should see hundreds of tiny water droplets along the surface of the substrate. If the water content is not correct then you won't see those, and your coir will start to turn a lighter brown in the uncolonized spots.
Getting a closer picture in general will help the community diagnose your problem more accurately.

Sorry about the quality, it's my phone camera. But I see water droplets on a lot of the knots but not very much anywhere else, should I mist?

It just smells humid to me, if that makes sense. I cant smell anything displeasing, or funky.

It looks like the large size of the tub, compared to the small puck of spawn, is causing you some humidity and Co2 issues.
I've always covered the surface of my tubs with a few layers of crinkled parchment paper to keep co2 in.

Co2 does not sink, so how is that keeping it in?

What is a "puck of spawn"?
Looks like a normal size tub to me....what co2 issues could there be?
And how would the amount of spawn effect the humidity/co2 levels?

It's just a regular sterilite 66 qt. and I used 5 qt. of sub and 3 qt. of spawn.
