The plastic is actually a big clear trash bag that I placed over the two crates (with the opening on the top and loosely overlapped).

No, I don't remove the wrap at all. I just made big slits on the side for better FAE. The whole set-up is inside an old dome tent to keep any gnats from attacking my mushrooms. And everyday since I made the big slits, I spray water on all four sides of the crate through the slits. I haven't sprayed the top yet since I can still see lots of humidity in there. Also, I placed a small grow light and a small bunch of sweet potato plant cuttings in water next to the crates and I've left the light on 24/7.

FYI: I started this project on 10-18-13; placed the slits on the plastic on 10-29-13, and first noticed the pinset on 11-3-13. I used 4 lbs of grain spawn to inoculate the prepared straws in both crates.

Here is a picture from this morning. They're beginning to look like little Smurf mushrooms now. :-) Do I still need to increase the FAE? I'm concerned that if I remove the plastic bag, it would dry the straw and the mushrooms to a point of the fruits' growth getting stunted.

these are some P. ostreatus/columbinus strain? It definitely looks like you need more fae either way. Maybe try to rig a bigger tent so theres more space between fruits and walls and lift it up and fan and spray it a few times a day. It'll probalby take some experimenting to get it right. Maybe if you can set it by a window and leave it open and the skirt of the cover up a little so fresh air blows under. Ideas like that you will have to brainstorm with. Good luck and look forward to seeing how you remedy this!

Okay. Another picture taken this evening. It looks like my mushrooms are trying to reach for the grow light. The light was situated to the left of the crates. So I turned the crates to have the mushroom-covered side facing the light. As I said, the whole set-up is in the basement. So the mushrooms only have the grow light as their only light source. I suppose I could move the light closer to the mushrooms and see how they react.

You have decent cap color so I would say it is not a light issue. Long stems = not enough fresh air. Oysters are easy to grow but not easy to grow perfect. You'll enjoy them regardless.

My P. columbinus came in similar to his with good color and all and long stems but when I changed from a couple 23w cfls to 2 shop lights with 2 bulbs each they came in full as could be. What type of light and how bright are they? Also spectrum range? Either way jeff is right about the long stems but you may benefit from some improvement in all areas. It's a learning process. We can tell you everything we know but experience rules all!

Ah! I think I see what you got now! Do you have this outside in a tent? Or maybe indoors? If it has mesh windows I'd open them babies so there is constant airflow going through and maybe if indoor add a fan to the room! Also I didn't check the price on the light you listed but if you have a menards around they have shoplights for like 7 bucks right now and you can get 2 bulbs for it for around 6. So way more light for 13 bucks. I'm not a light expert so I'm not even sure you need more. I used cfl's for awhile myself but now that I have a bigger space I had to increase the lighting. But when I did I noticed way better growth on all my mushrooms Take what you learn during the first flush and utilize it for the second one and see where that gets you. If it's still stemmy like that then look at more variables and start again from the beginning or go for more flushes.

View from the top.

View kind of from the front

The caps are getting bigger! And I'm noticing that the youngest pins are colored bluish dark grey instead of the first pins that were blue. From pictures on the web, the bluish grey to light grey colors are the true colors when grown outdoors. So when my pins started, they must have been anemic. 
By the way, my crates are inside a tent with the mesh door and window in place. The tent is located in the basement.

Ok I see, they are milk crates, I think (viewing on a 7in tab). Curious, does the blue crate have a solid bottom or do both crates intermingle? Was noticing the clusters are hanging at the the border of the two. Might be a nice place to start some petri work...

I think what you're seeing are the dried up hydrated lime from when I prepared the straw.

The two milk crates have holes on the bottom similar to the holes on the sides. I just stacked them one on top of the other.

I am just trying to share my experience MO. By tomorrow morning the caps will be upturned. You will more than likely see a large dusting of spores on the floor around your crates. If you are trying to do sterile work in a glove box or even in front of a hood the spores will haunt you.

More mushrooms growing on the lower crate. It looks like they are bigger than the ones that grew on the top crate. I suppose that is the result of getting more exposure to the light from the time they started pinning.

Or more fresh air. Light is a factor but from my experience it is a function of the color of the caps.

Managed to harvest a handful more. It almost makes me think of a wedding bouquet. And this time, you can eat it, too, after you're done with the wedding. :-)

The top crate is producing its second flush on two sides! I had to add a second grow light to help them mature.
I think the second flush came soon after I poured some rain water over the straw on the top crate. I couldn't dunk the crate so I figured pouring would be second best.

After adding another grow light, the colors of the cap has changed overnight. I've been keeping the grow light on 24/7.

11-16-13 pm. The mushrooms are still growing. I plan on harvesting the bigger ones tomorrow.

The gnats somehow found their way in the tent. I sure hate them.

Best way ever to eat oysters if you ask me, just saute them with the other ingredients in a big pan till cooked, add your egg/milk mix, toss on your cheese and maybe some tomatoes, and bake at 375 for 20 min or until it looks done. So delicious! I like to add some spicy thai peppers sometimes too.
Ah, making me wish I had some oysters growing now!

Yeah no problem that was just the basic simplified version, check out other frittata recipes to get the details right

I'm quite fond of oyster mushrooms fried till golden brown with garlic. They are thin so you get all so you get more crust to flesh ratio. I have a hard time pairing the flavor and texture with other ingredients (although maybe that's because I try and avoid meat). Bonus points if you fry them till crispy first and then embed them in an omlette .
I did it to some slippery jacks and the spongey pores got deliciously crunchy. I couldn't begin to understand why people speak poorly of them. Then I tried to sautee them with wine and they turned out slimy and insipid just like all the field guides say.
Maillard reaction and mushrooms are made for each other.

Do you use butter or vegetable oil to fry them in?

Dude, I was reading the title and going like what? Who couldn't just get oysters from the store, dump it into agar or grain or newspaper and have them grow. Nice cover up for the legal strains bro.

I'm a bonafide newbie when it comes to growing mushrooms. When I tried this at the beginning of this year, I bought plug spawns to try and grow them on logs but also put the extra plugs in a plastic bag full of straws and some coffee grounds. The bag actually grew but it didn't produce a lot. Some of the logs also sprouted some mushrooms. But I had problems with green molds and gnats from then on. So that experiment had mediocre results.
This second attempt really turned out well. And I'm happy with it.

just because theres gree mold on the surface of the log doesnt mean it wont produce fruits, all of ours have mold on them and produce well, the mycelium is still below the bark eating the log itself..

I made it! I think I added too many ingredients in it though since I could barely taste the mushroom (it also has pork meat and carrots in it). And I may have added too many eggs so it tasted more like an omelette to me. I'll try again with less eggs next time. Thanks again for the tips.
