It's definitely doable. I used to know a guy who recorded music and played gigs all over the place, and he didn't pick up guitar until he was about 30. Then he learned keyboard.

Learning as an adult is harder in some ways but easier in others.
No self discipline? Forget it. Don't waste your $$.
Obsessive and passionate? Not easily discouraged? Then you can do it and you will get enormous satisfaction.
Be sure and get a good quality, well set-up instrument.
Not only is it investing in yourself (commitment!) but it will be way easier to play, sound much better and be worth more than you paid over time.

If you're looking for easy the bass might be worth consideration.

That's not to say you can't do awesome, or complex things with a bass. But rather, many basslines are, by their nature, simple.

Also, a bass is somewhat more symmetrical in its setup than a guitar.

Plus, a bass is really just the top (direction-wise) or bottom (note-frequency-wise) four strings of a six string. So once you get going on the bass, you already have a bit of the 6 string mastered.

I don't play bass but the mando- and tenor (tenor banjo, tenor guitar) instrument families have some of those same advantages. Four strings (or pairs of strings in the case of mandolin etc) keeps things simple, and the intervals between strings are consistent (fifths, or 7 semitones.) There is also a cross-compatibility of fingerings with fiddle/violin.

Of course playing solo can be fun too:
