That sounds delicious. Are you going to use a Witbier or Hefe yeast and have all those crazy phenolics or are you going to just use a wheat-heavy grain bill and a standard American yeast strain?

I didn't say cold crashing killed your yeast, I said they would either be dead or dormant, and that statement is still 100% correct. Haha nah I like Wyeast enough. I am partial to White Labs though because they have an office in the same building as my brewery so I can get unlimited free homebrew vials of any strain I want. When you buy a 70L pitch once every other month they tend to treat you right.

Doing a partial mash,50% wheat and 50% german pils, 2 lbs wheat DME and a 29 oz can pumpkin, and WB-06 dry yeast(yeah, yeah...), and some McCormic's pumpkin pie spice at knock out, prolly 1 tsp. I may have to add some more at bottling, we'll see. Oh and I'm useing 1oz tettnanger at 60 mins and .5 oz saaz at 30 mins as well. Looks to be a pretty big beer, well for a 3 gallon batch any way.

My LHBS was closed yesterday when it was supposed to be open. Dunno what was up with that but I'll swing back by today to check, gotta pick up the yeast. I think I might have time today to do my brew.

I'm going to turn my lager into an ale. I haven't brewed it yet so, by turning it from lager to an ale I mean, I'm buying aleyeast... :p And a little more munich. So I am adding 2lb of munich to that and it should give it a little more flavor.

White labs and wyeast are the same price here... I got white labs california ale yeast this time (decided to make this into an ale instead of a lager because I have so little time to do monitoring while in school). So far so good on the fermentation, can't wait to try it, it smells delicious.

Color after racking to secondary for a dry hopping. (Will be using gelatin to clarify it pre-bottle).
Going to bottle half of it with regular priming sugar and the other half with maple syrup to see how it is. I really liked the taste of it, so I Don't want to do the entire thing with maple.

What the fuck is it with homebrewers thinking that gold medals are the only way to measure if your beer is good? All a medal means is that the beer was brewed to fit a style category guideline, it really has nothing to do with exceptional flavor.

I've never entered a competition nor do I plan to. I'm more about brewing batches for me and friends that we can all enjoy. I can perfect the taste through means of opinions and careful modifications to recipes until I dial into what I want.
Fortunately I like a huge variety of different styles of ales and lagers, stouts, porters, saisons wheats and anything else that exists.

Got it bottled, used maple syrup Grade B for priming sugar! The clarity is there, I used Gelatin as a fining agent this time! Will do a whirlfloc next brew.
