So the shamans of south America use ayahuasca to reach the spirit realms and to take deep inner voyages. What do the holy men? Is that what they're called? What do the spiritual people of India use to access these places, besides natural ways. Any plants etc?

Cannabis has been used in a religious and spiritual context in India since the Vedic period dating back to approximately 1500BCE but perhaps as far back as 2000BCE. -WIKI

they're called sadhus and they consume changa i believe, as well as cannabis and hash.
every four years they all meet at one of four predetermined spots, called kumbha mela.
sadhu's are mother fuckin badasses, they perform the most bad ass tapas (austerities), survive on two glasses of milk and a banana everyday, and are able to survive as travelling ascetics.
for real yo, if it was up to me i'd be a fuckin sadhu.
they don't reach spiritual states only with cannabis. they practice yoga, and i mean all 8 limbs, not just asanas (postures) - look to yoga sutras.
yoga is a lifestyle, and the reason it works is because it incorporates dominance of the physical body first through asana in order to be able to dominate their mentality with pranayama (breath)

where i'm from i talk to the indians that run the deli's and most of them come from villages with sadhus.
the sadhu is so revered because his denouncing ordinary life consumes the sins of the community.
also, if you want look up "sidhi's", these are supernatural powers associated with mastery of yoga for thousands of years.
wicked good astrologers too, yet the vedic astrology begins with your moon sign as opposed to western astrology beginning with the sun.

not sure if India has these but Afghanistan has dried scorpion tails which are said to bring on a mescaline-like trip that can last days

I saw one of these guys, a sadhu, in Hungary, at Ozora 2013.
The man was from South Africa originally, a white guy, but had been living in India doing the sadhu thing for who knows how many years. He looked the part, acted the part, and as far as I could tell, was the part 100%.
We met twice, and both times it felt like a trip. He could see right through you. He'd say something and it would hit you like a ton of bricks.
His body was seriously thin, I mean Auschwitz kind of thin, but his eyes and mind were fully present. If long years of traveling, tripping and other experiments don't teach me what I want to know and help me find inner peace, at a certain age I will start considering joining these guys, because they seem to have "found it".
Also, food for thought: the man had the simple clothes on his back, long beard, long long hair, sandals or no shoes (can't recall, I think no shoes) and I imagine no plane tickets nor great sums of cash. How the hell does one even get from India all the way to Hungary in that state? It's 7,600 km!! Amazing.
And yes he was smoking cannabis, he mentioned that he does that to "recharge himself". He was chilling all the times I've seen him, usually sitting and taking in the good vibes, passing a joint in a circle, one time this smoking hot young festival girl was giving him a massage, as he was sitting in a lotus position at the chillout area. Definitely one of the most interesting characters I've seen to date.
