We found this cluster of brat oyster this morning that was purple?? sorry the picture doesnt do  it justice.  Can fungi just randomly make novel pigments?  Environmental?  Dunno.

Last fall I had a whole bunch of grey oysters that did similar things as the temps got cold. Pictures could never get the colors right but they had a serious violet color going on. I always assumed it was from the temperature.

I have seen wild oyster mushrooms growing on alder trees exhibit a similar pigmentation.
